I whipped up some homemade meatballs the other night for our spaghetti and to freeze for later. I thought I’d share here for an easy make ahead / freeze for later meal. My kids love the frozen meatballs from Trader Joe’s, but I thought why not make our own.
Ingredients
1 lb ground beef
1 egg
1/3 cup bread crumbs
1/4 cup grated parmesan cheese
1/3 cup chopped onion
2 tsp minced garlic
What Kind of meat do you use to make meatballs
I used ground beef because we have a ton of it right now. But you could easily use ground chicken or ground turkey too!
Can you make the meatballs in advance?
I haven’t made them ahead of time, but I see no reason why you couldn’t. I would store the mixture in the fridge for no more than 2 or 3 days.
Can you freeze homemade meatballs?
Absolutely! I ended up freezing half of this batch. You could freeze BEFORE baking or freeze AFTER baking. In this case, I froze after baking. Just throw in a ziploc freezer bag and make sure you write the date on it.
Instructions

Preheat oven to 400 degrees. Place silicone baking mat on baking sheet.

Combine all ingredients in bowl using meat masher

Use the cookie scoop (or spoon) to scoop the meat onto the pan in 1-1.5in balls

Bake uncovered for 30 min (flipping halfway through)

Serve over spaghetti or as is

OR Freeze for use later
