I am all about fast and easy recipes…especially for breakfast! This recipe for sheet pan pancakes checks all of the boxes! Our mornings are always hectic, so I love trying to prep breakfasts ahead of time on Sunday’s that can be eaten all week. The Simply Schnuck’s magazine is available each month in store and online. The August edition is full of quick and healthy meals and snacks to get you ready for back to school!

Sheet Pan Pancakes Ingredients
4 Cups Bisquick Pancake and Baking Mix
4 Eggs
2 Cups Milk
1 tsp Vanilla Extract
1-2 Cups toppings of your choice (i.e. Chocolate Chips, Peaches, Strawberries, and Blueberries)
Optional: Syrup for serving

We went with four different toppings that we could distribute evenly throughout the pan. Strawberries, blueberries, peaches and chocolate chips (the kid fave) of course.

Baking Instructions
Preheat oven to 425 degrees; spray cookie sheet with cooking spray
In a large bowl, mix Bisquick, eggs, milk, and vanilla until combined
Pour batter into pan and spread evenly
Evenly distribute toppings across the batter
Bake for 20-25 min
Refrigerate leftovers for up to 3 days. Reheat in microwave before serving.

Help! I made these tonight, they tasted delicious, however they were SO thick, where did I go wrong?
Hmmm…not sure! Did you use a deeper pan/cookie sheet? I do notice that sometimes mine come out thicker in the center of the pan.

Have you ever made these with pumpkin puree? Maybe use 2 eggs instead of 4 and 1 can pumpkin? Thanks for your thoughts.
