I am all for an easy weeknight meal that tastes good and has healthy ingredients. A sheet pan meal is about as easy as it gets. I recently heard about a new online recipe business called Plan and Plate It. They create e-cookbooks that contain easy meals for breakfast, lunch and dinner (kid friendly too)! Each book comes with detailed shopping lists and an entire weeks worth of meal plans. So far I’ve only had the chance to try this easy sheet pan meal, and I adapted it slightly. The recipe called for spicy chicken sausage, but I opted for garlic chicken sausage instead. I also left out the red pepper seasoning.

Ingredients
1 package garlic chicken sausage
1 package baby zuchini (you can find a pkg of these at Trader Joe’s
1 red bell pepper
1⁄2 red onion
2 cups broccoli florets
1 bag of mini potatoes
4 tablespoons pesto sauce
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon salt
Directions
Heat oven to 450 degrees.
Chop zucchini, pepper, onion, broccoli and potatoes into bite size pieces.
Chop sausage into 1/2 inch slices.
Scatter vegetables and sausage on to baking sheet (use two if you don’t want overcrowding)
Drizzle pesto sauce onto pan along with olive oil, garlic powder and salt
Toss to coat
Bake for 30 minutes, tossing once in the middle to ensure veggies cook evenly
