Easy Homemade Pineapple Popsicles

It’s still summer for a few more weeks, so if you’re looking for something fun to try with the kids check out these homemade pineapple popsicles!

What do I need to make homemade pineapple popsicles?

The ingredients are minimal, and for the most part these are on the healthier side!  I grabbed these popsicle molds from Amazon recently on a daily deal and they have come in super handy!  We actually came across this fun recipe in a recent High Five edition.  I modified a few things, and they turned out great!  Here’s what you will need:

  • 14oz. Sweetened or Unsweetened Condensed Milk
  • 1 Cup Coconut Milk
  • Popsicle Molds
  • 1 1/2 Cups Cool Whip
  • 1 Can Crushed Pineapple (drained)…I accidentally bought the tidbits, and they worked just fine, crushed would’ve worked better though!

How to make homemade popsicles

Grab a large mixing bowl and get ready to mix all ingredients together.  Be sure to drain the canned pineapple first.  Mix together all ingredients for about two minutes.  We just hand mixed ours so no need to break out the fancy mixer for this easy recipe! The molds make it super simple to just pour the mixture into.  Make sure to leave about 1/2 inch from the top to account for inserting the stick into the mold.  The molds from Amazon come with a nifty little funnel to get the perfect pour (though we still managed to make a mess because #kids).  Once you have your mix poured, place them in the freezer for 4+ hours and then ENJOY!

Easy Homemade Pineapple Popsicles

Create delicious homemade popsicles from the comforts of home!

Equipment

  • Popsicle molds

Ingredients
  

  • 1 14oz Can of Sweetened Condensed Milk
  • 1 Cup Unsweetened Coconut Milk
  • 1 1/2 Cups Cool Whip
  • 1 1/2 Cups Crushed Pineapple drained

Instructions
 

  • In a large bowl, stir together the condensed milk, coconut milk, cool whip, and pineapple.
  • Pour mixture into popsicle molds leaving about 1/2 an inch at the top of the mold
  • Place in freezer for 4 hours
  • Serve + enjoy!
