How to Make Royal Icing
A classic royal icing recipe made with meringue powder.

- 4 C Powdered Sugar
- 3 tbsp Meringue Powder
- 10-15 tbsp Water
- Food Coloring optional
Using a stand mixer with whisk attachment, beat all ingredients (including food coloring) together on high speed for 3- 5 minutes. When you lift the whisk out of the icing, it should drizzle down and smooth out within about 5 seconds. If this doesn't happen, continue to add 1 tbsp water at a time to thin it out. If it's too thin, add a little more powdered sugar.
Transfer icing to squeezable condiment bottles for easy application (especially with kids).
If you won't be using the icing right away, place a damp paper towel over the top of the bottles (lid off) and leave on the counter. If it will be some time before using place in an airtight container in your refrigerator for up to 2 weeks. Icing can be frozen for up to one month.
When ready to use, remove from fridge or freezer and once the icing is malleable it is ready to be used.
